Heirloom tomatoes are oven roasted with slivers of onions, jalapenos, garlic, fresh herbs like thyme, basil, and rosemary, then drizzled with olive oil and salt. The bright yellows, reds, and sometimes purple tomatoes melt into a thick orange-ruby that creates this lovely colored ketchup. we then blitz this and add sugar, celery salt, mustard powder, ground ginger, celery salt, chili flakes, and salt and pepper. you won’t find a ketchup like this in the stores.
