My wife, our flavor creator, is obsessed with Fuyu persimmons. The brightly colored fruit hanging on the trees in the orchard are like a memory of sunshine. That much needed sunshine as we head towards chilly, bare winter.

Fuyu Persimmons are sweet and are eaten when crunchy. We took these little beauties and softened them slowly, removing any skins but leaving some larger chunks of the fruit. Adding a small amount of cane sugar, lemon juice, and a hint of orange blossom. Complimented by cinnamon, ginger, cardamom and a hint of cloves makes these winter beauties sing. Great on cheeseboards as a fun and festive addition. Our home has been enjoying it with double cream brie and goat cheese on our crunchy sourdough bread. What will you be inspired to put it on?
