Seasonal Stone Fruit Jam

We couldn’t decide which fruit we wanted to highlight with this jam, so we added them all together. Beautiful blushing Rainer cherries, soft and complex apricots, and fuzzy peaches dance with lime zest and juice in this jar. Our kids love pitting their cherries, so we put our oldest to work with the pitting tool. Blitzing cherries and apricots with skin and all with some beautiful white peaches. All this jam needed was some cane sugar, pectin, and a good amount of lime to rock and roll. It’s a seasonal recipe so once it’s gone you won’t see it again until the fruit trees have more.

Our boys have been enjoying after school PB&Js with this jam all week. I did glaze a little cherry tart with this jam and would have taken photographic evidence, but it was a delicious disaster. I will take more pictures this week, I promise.
